Straight from the Farm

Western Quiche

INGREDIENTS 

  • 1 pound of Gus’s Farm Ham Steak chopped

  • 2 tablespoons extra-virgin olive oil

  • 1 ½ cups thinly sliced sweet onion

  • 1 cup of green and red bell peppers diced 

  • 1 tablespoon thinly sliced garlic

  • 6 large eggs 

  • ¼ cup whole milk 

  • ¼ cup half-and-half (*substitute whole milk for a low fat option) 

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 1 ½ cups shredded cheddar cheese 

  • Prepared pie crust

Gus's Farm Meatballs

​INGREDIENTS 

  • â…“ cup plain bread crumbs

  •  ½ cup milk

  •  2 tablespoons olive oil

  •  1 onion, diced

  •  1 pound Gus’s Farm Grass-fed ground beef

  •  1 pound Gus’s Farm ground pork

  •  2 eggs

  •  2 tablespoons grated Parmesan cheese

  •  ¼ bunch fresh parsley, chopped

  •  3 cloves garlic, crushed

  •  2 teaspoons salt

  •  1 teaspoon ground black pepper

  •  1 teaspoon dried Italian herb seasoning

  • ½ teaspoon red pepper flakes

Sweet Italian Sausage & Spinach Soup

​INGREDIENTS 

  • 1 pound of Gus’s Farm Sweet Italian Sausage

  • 1 medium onion

  • 3 cups of fresh spinach

  • 1 cup of shredded carrots

  • 15oz can of chick peas (be sure to rinse first)

  • 32oz Chicken broth

  • 15oz Diced tomatoes

  • 1 tablespoon of olive oil

  • 2 teaspoons of basil

  • 1 teaspoon of garlic

  • Salt & pepper to taste

  • Optional: Crushed red pepper flakes

Chocolate Chip Blueberry Cookies

  • INGREDIENTS

  • 2 1/4 Cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 cups butter (one and a half sticks butter), room temperature

  • 1/4 cup lard → Make with Gus’s Farm Lard

  • 3/4 cups brown sugar

  • 3/4 cups sugar

  • 2 tsp vanilla extract

  • 2 eggs

  • 10 oz. chocolate chips 

  • 1 cup (or more as desired) frozen, partially dehydrated blueberries , optional.
